BBQ Chicken and Halloumi Skewers with Quinoa and Feta Salad

Food writer Emma Chambers shares with us her healthy, summer BBQ recipe

This is a really simply and easy dish to make for the BBQ and it can be prepped in advance. This is one of my all time favourites as you can still enjoy a BBQ minus the calories!

For the skewers you will need:
- Chicken cut into cubes
- Halloumi
- Peppers
- Mushrooms

Simply add all the ingredients to a metal skewer, you can buy these in any supermarket. Once finished, drizzle the skewer in olive oil and a pinch of salt. Simply add to the BBQ and turn every 5 minutes until cooked. These can easily be made vegetarian by replacing the chicken with more Halloumi.

For the salad you will need: 

You can still enjoy the BBQ minus the calories

- Quinoa
- Feta
- Veggie stock cube
- Beetroot
- Tomato
-Red onion

Simmer the quinoa for 25 minutes with the stock cube. Once cooked, drain and leave to cool. While the quinoa is cooling, chop up feta, beetroot, tomato and red onion and add to the salad when it is ready. So simply but yet so tasty and healthy for a warm summers day.
